I do not like to have a oily kitchen, but I loved to cook.

Pan-fried food.
Heat the pan to hot, add olive oil, add seasoned meats and cover the saute' pan with a lid, and turn the heat to low. You want to turn the meat over, turn off the flames and wait for a while, the stream settled down, remove the lid and turn the meat over, cover the lid and turn the flame up, until the flames sealed the meat,the turn the flames to low and continue cooking until it is cooked.
Don't remove the lid wait until the stream settled down, then you open the lid.


Oven cooking
Seasoned the meat, take a foil make a boat shape cup the side of the meat, in this way there is no drippings from the meat.


Cooking vegetables.
Stream the vegetables, don't have to put water, cover the lid of micro-container, cook in a micro-wave oven, when cooked remove the vegetables and use the juice from the vegetables to make a sauce for the vegetables.
Heat up a sauce pan, (don't use a saute' pan) add oil add oysters sauce for chinese food, stir the oysters sauce in hot oil and add the stream vegetable stir and fried the vegetables only for a short time and remove from pan. Don' t use a wok because the kitchen get oily. Use the juice from the vegetables add a little water bring it to the boil, mixed cornflour and water stir, pour into vegetables stock to thicken the sauce. Pour the sauce over the vegetables during service.
